Simple Pumpkin Pie Spice Chia Seed Pudding

Fall Season is Here!

Alright, so who isn't obsessed about pumpkin anything when it's Fall? I personally don't think I go overboard, but it's definitely something I try to incorporate in my snacks, desserts, or coffee. So for this particular snack, I definitely wanted to incorporate some pumpkin flavor into it without overwhelming it with pumpkin. 

Let's go over what chia seeds are first and foremost! Chia seeds come from the desert plant Salvia hispanica, a member of the mint family. Salvia hispanica seed is often sold under its common name "chia" as well as several trademarked names. Its origin is believed to be in Central America where the see was a staple in the ancient Aztec diet. So what about the benefits? Chia seeds have recently gained its popularity with its excellent source of omega-3 fatty acids, fiber at 10 grams per ounce (about 2 tablespoons), protein, iron, calcium, magnesium, and zinc. Research suggests that by incorporating chia seeds into your diet it may help improve cardiovascular risk factors such as lowering cholesterol, triglycerides and blood pressure. Awesome sauce!

So now knowing that fantastic news, here is my recipe of Pumpkin Pie Spice Chia Seed Pudding..



Ingriedents

1 cup vanilla-flavored unsweetened almond milk (I used coconut milk) 
1 cup plain low-fat Greek yogurt
2 tablespoons of honey (or pure maple syrup) plus 4 teaspoons for serving
1 teaspoon pure vanilla extract 
Kosher salt
1/4 cup chia seeds
2 teaspoons of pumpkin pie spice
2 teaspoons of cinnamon
1/4 c chopped pumpkin seeds (or pistachios)

Directions

In a medium bowl, whisk the milk, yogurt, 2 tablespoons honey, the vanilla and 1/8 teaspoon of salt until just blended. Whisk in the chia seeds; let stand for 30 minutes. Stir to distribute the seeds if they have settled. cover and refrigerate overnight.
The next day, grab some mason jars, bowls, glasses, whatever you prefer and spoon the pudding half way full into your glass then sprinkle in some pumpkin pie spice, cinnamon, and the pumpkin seeds (or in my case pistachios), and then fill the rest with more pudding, sprinkle the rest of the pumpkin pie spice, cinnamon, and seeds. Lastly, trickle some honey or syrup on top. And that's it! Mmmmm I hope you enjoy it! If you have any suggestions or have your version, please feel free to comment and share. Fun tip: if you use mason jars you can distribute your pudding however you'd like and leave it in the fridge and keep it on hand for snacks throughout the week :)

90 Days of P90X Complete!



Aloha!

I am so happy to announce that I finished P90X. Woo hoo! I can't believe how quickly those 90 days went. When I first started I was 9 months pregnant. It was my first pregnancy and I was gaining weight fairly quickly. At first, when I found out I was pregnant back in October I was so hesitant with incorporating any kind of exercise that I was doing before then just because I was so scared to miscarry like I did in the past. So I practically walked on egg shells until I was in my third trimester. Plus, in my first trimester I was always exhausted and overwhelmed with nausea I rarely made it through the days at work. However, once I noticed how much weight I was gaining I knew I had to implement some type of workout routine to sustain my fitness and health. After all it was discouraging hearing my midwife telling me I was gaining excessive weight. Not fun hearing that.

So my journey began. I remember telling myself, hey I have Insanity and P90X. I can totally do this while I'm hanging out at home, that way I don't have to be embarrassed about how much weight I've gained and trying to workout at the gym. I knew Insanity wasn't going to be my best option. There was no way I would be able to do all the high-intensity interval training, all the jumps, and speed intervals. Not with this baby inside of me. So P90X it was.

Oh boy when I started I was already breathing heavily during the warm-up. But I stuck with it and realized how much I started falling in love with it again. It was great because I knew I could modify and there was no pressure to try to go all out. I was 9 months pregnant after all.

As the weeks went by, I started getting in the hang of it and I absolutely loved every single minute of it. I was starting to get stronger. My endurance would increase, my weights got heavier, and I was feeling better about myself. I was having fun working out while being pregnant. It was awesome. It was my little stress reliever to anything I was feeling awful about that day.

Unfortunately, I had a resting gap and had to stop when I went into labor. This being my first pregnancy I had no clue how much your body needs to recover after delivering a baby. In my mind I thought, 'hey, I can snap back real quick and jump back into continuing my P90X.' Haha, boy I was dead wrong. Even when I thought I was feeling better, I knew it wouldn't be a smart idea to pick up where I left off. I was so anxious to get going, but it was important to listen to my body and get a full recovery first. Otherwise, I probably would have prolonged it.

In the meantime, I was able to do little challenges that I knew would help me build back up to where I left off in my P90X journey. So, while I was on Facebook I stumbled on the Spartan 30 day push up challenge. I thought, how cool, this is perfect! Even though the event was back in March or April, I still wanted to do it. I knew I needed to get stronger with my pushups anyways, I can just start off slow. At least this way I'm getting some type of exercise in while I was still trying to recover.

I remember trying to do one regular pushup and how much it hurt. Oh no, this was going to be tough! So I said, 'well Jules you just have to start with modified pushups.' So I did. It sucks having to start all over but that's the hardest hurdle to jump over. Once you do it and you stay consistent, you'll see progress. And sure enough after the 30 days, I was able to finally do 30 standard pushups.

Then I was hooked. I continued on and did the next month's challenge: Spartan 30 day Lunge Challenge. By that time I was strong enough to continue where I had left off with P90X.

60 days went by and then 90 days. The last 30 days I incorporated a hybrid workout with PiYo and boy did it kick my butt. Actually it's still quite challenging, even though it does seem easier, it's a sweat session for sure! I love every single day of it.
So here it is, the moment of truth....and these are my results.
P90X plus Shakeology:
So in 90 days I was able to lose a total of 22.8 pounds and 25.5 inches total. How awesome! I'm so proud of myself. My first pregnancy and I rocked out P90X. I seriously couldn't have done it without my support and accountability group I had. My amazing team of coaches and challengers kept me motivated and inspired every single day. Being a part of a challenge group not only provides support, accountability, motivation, and all the essential tools to know how to improve your health and fitness, it also introduces you to an amazing group of people who you become friends with throughout the challenge. I've seriously come across genuine, sincere women who have been in my shoes, who are going through the same exact things I was, feeling tired, thinking of giving up, feeling defeated, and not thinking they would reach their goals. However, the best part of it all was having them on your team cheering you on. I wouldn't have gotten these results without being a part of a challenge group. This is one of the reasons why I love being a part of this movement; why I became a coach!

So if you've ever thought of doing P90X, I would highly recommend it in a heart beat. P90X is such an amazing workout for anyone. If you're a beginner, advanced, pregnant, out of shape, younger, older, it doesn't matter. It's at a great pace that anyone can follow and you always have the option to modify. Oh you better believe I did plenty of that when I first started. There's no shame in modifying any type of exercise. The only shame you should feel is when you don't workout! Your body will thank you for it. You'll feel amazing and so happy that you did it! So if you're debating on whether or not you can do P90X, don't doubt yourself. You can do it! When you believe you can, you will succeed. No matter how much it may intimidate you, you can do anything you put your mind to. Don't let anyone get in your way, not even yourself. Pan Seared Salmon with Kale and Arugula Apple Salad

Alright, who doesn't like a yummy salmon dish with some fresh crisp salad on the side? I never used to be a big fan of fish when I was little, but my sister, she loves seafood til this day. And now, so do I.
When I was stationed in Kodiak, Alaska I was pretty spoiled with fresh caught wild Alaskan Salmon, Halibut, King Crab, and Dungeness Crab. Talk about spoiled! I miss it. So eating salmon always brings me back.
Here is the recipe!
Ingredients
4 5oz of center cut salmon filets (about an inch thick)
2 lemons, freshly squeezed
1/4 c olive oil
1 bunch kale, ribs removed, leaves thinly sliced (about 6 cups)
3 c of arugula
1 honeycrisp apple
1/4 c fresh parmesean, grated
1/4 c chopped almonds
Freshly ground black pepper
Salt
Directions
Bring salmon to room temperature 10 minutes before cooking. Meanwhile, whisk together the lemon juice, olive oil, and salt in a large bowl. Add the kale and arugula, toss to coat and let stand for 10 minutes. While the kale and Arugula stand, cut the apple into thin strips. Add the apples, chopped almonds, and parmesean. Season with pepper, toss well and set aside.
Sprinkle salt and pepper all over salmon filets. Heat a tablespoon of olive oil in a nonstick skillet over medium heat.  Place salmon skin side down and cook for about 4 minutes. Turn fish with spatula and cook for another 3-4 minutes.
Serve and enjoy!

2 month post pregnancy

Hey guys, wow, it's already September. Holy cow. Where did the time go? So Happy September everyone!! Yay for the Fall Season. I'm super happy about the holidays, it's my absolute favorite time of the year. So anyhow, I finally finished my June 23rd Summer Sizzle Challenge group. And I'm so happy with my results considering I started the challenge in my third trimester. So here it is...I lost a total of 22 pounds and 11 inches. Exciting stuff right there. I can only imagine how much more I could have accomplished if I wasn't pregnant. However, it just shows that even though you are, you can still do it!! I can't believe how fast those 60 days went. It's incredible how much faster time flies by after each year. I mean, it's already September! Wasn't it just January? 

Any ways, I wanted to flash back to my pregnancy and show you guys pictures of my imperfections and just simply reminisce of my first pregnancy. I have to admit, I do miss my baby bump and having Konrad Keilani in there kicking. Just October of last year, I went to the doc trying to figure out what was wrong with me. At first, I thought I was just sick. My husband and I, realized that if we were going to get pregnant that it was just going to happen on it's own and that we should leave it in God's hands. Soon after we did that, this little miracle baby came to light. When I got my test results back I was in utter shock and in disbelief. Haha, I can still clearly remember that day to the tee! As soon as I got into the truck I called Conrad. He seriously thought I was joking with him. He couldn't wrap it around his head and kept asking, "Are you sure? Are you sure? You're messing with me right?" Haha. Nope, I had the test right in my hands and it says I'm pregnant. How freaking cool.

Okay, so back to my progress. So right now I'm finishing up my last 30 days of P90X, since it's a 90 day workout. I absolutely love it and can't wait to get my hands on P90X2 and P90X3. Both programs look amazing! I also started up PiYo on August 4th, so I'm doing a hybrid workout right now. Let me tell you...PiYo is no joke. Chalene Johnson is amazing at kicking your butt and making you sweat. It's an awesome, awesome workout. I have yet to go to a live class. It's such a fun and exhilarating workout. I'm such a happy person at the end when I finish because damn they are hard! If you haven't gotten yours, I highly suggest it. Please feel free to comment or contact me for more details. 

Any, how so it's already almost been 30 days since I've been hitting it hard with PiYo and P90X. I'm thrilled to see how my progress has been so far. Check back with me August 9th and I'll post it. Once I am finished with this hybrid workout I'm rolling right into Shaun T's Focus T25 and Autumn Calabrese's 21 day fix hybrid. Oh man this is going to be a good one! Perfect for the holidays to keep my cardio at it's peak by incorporating high-intensity interval training and keeping my food intake in check with portion control. I already see it now, this is going to be so tough with all the baking and good holiday foods and festivities (sigh). But you have to do what it takes to get what you want. And yes, I do want my six pack!! Haha.
